The Beautiful Weed　水浮莲请让道

Water hyacinths float on streams, lakes, and rivers in subtropical and tropical regions. Originally from the Amazon basin, they have floated their way around the world. Although people grow them in their gardens, they are considered a nuisance in nature. Water hyacinths grow so quickly and become so dense that a person can walk on top of them to cross a river. When they grow into thick mats, this robs underwater plants and creatures of light, nutrients, and oxygen. They get in the way of fishermen's boats, and can even invade and cover rice paddies. Water hyacinths can also do damage to bridges and dams by pushing their weight against them.

These stunning plants also house malarial mosquitoes and snails that can transmit parasites. Efforts in controlling these wild beauties have not been very successful. Removing the plants by hand can be pointless. If a single seed is left behind, it can become a plant that grows into 3,000 others in just 50 days. A species of moth and two kinds of beetles were introduced to the plant in many places of the world to feed off the water hyacinths. This has helped slow down their growth, but they are still present. Perhaps in time there will be a way to better control this beautiful weed.

Delectable Dangerous Dairy　可口又危险的乳制品

Looking around a bakery, one would be hard pressed to find something that does not contain cheese, cream, or pudding. From a piece of cake to a ham and cheddar sandwich, you are bound to bite into something made from milk. These delectable delights with their rich and creamy ingredients all have one thing in common: dairy products.

It has been known for years that dairy products are an important source of calcium. Calcium is essential to the development of one's bones and teeth. Eating three to four servings daily is best for optimal benefits. While this is the ideal, 90% of Asians are lactose intolerant and lack the enzyme to properly digest dairy products. The result can be an upset stomach, gas, diarrhea, and flatulence.

Unfortunately, many people consume dairy products that aren't of the best quality. Cheese may be appetizing and nutritious, but when prepared in the form of fried cheese sticks, it can do more harm than good. A serving of cheese sticks can contain over 600 calories, 46% of which come from fat!

Nutritionists often warn vegetarians against consuming too much dairy in place of meat. An ill-informed vegetarian may start a meal with bread smothered with butter, followed by a plate full of cheesy lasagna.

In its various forms, dairy products are delicious and nutritious, but like everything else, moderation is the key.

营养学家常警告素食者别摄取太多乳制品来代替肉类。信息错误的素食者用餐时，可能先来片涂了厚厚一层奶油的面包，再来一盘满满的干酪宽面。

各式各样的乳制品既好吃又营养，但就像其他任何东西一样，适度是关键。
