2015 年第 28 卷第 10 期 粮食与油脂 5 玫瑰精油的研究与应用现状 王慧英，王金亭 （聊城大学东昌学院化学与生物系， 山东聊城 252000 ） 摘 要：玫瑰精油是从玫瑰花中提取的一组安全、无毒、有特殊香味的挥发性物质。目前，主要以 水蒸气蒸馏法提取，化学成分极其复杂，主要活性物质为萜烯类、醇类、酯类、醚类、醛类和烷烃类 等物质，主要呈香味物质是香茅醇、香叶醇、苯乙醇、芳樟醇、丁香酚、玫瑰醚等。玫瑰精油性质稳 定，具有很好的抗氧化、抗抑郁、抗菌活性，作为天然的香味剂，可用于医疗保健、美容化妆和高档 日化用品。参考国内外近10 年来的最新研究成果，综述了玫瑰精油提取工艺、化学组分、理化特 征和应用价值，对加强玫瑰精油的深入研究和综合开发具有一定的参考价值。 关键词：玫瑰精油；化学成分；生物活性；应用开发 Research and application status of rose ethereal oil WANG Hui-ying ，WANG Jin-ting （Department of Chemistry and Biology ，Dongchang College of Liaocheng University ，Liaocheng 252000 ，Shandong ，China ） Abstract ：Rose ethereal oil （REO ） is not real oil ，it is a kind of volatile substance extracted from the rose flowers by hydrodistillation ，which is safe and non–poisonous ，and has special flavor Its chemical composition is complex extremely and the main active components are terpenes ，alcohols ， esters ，ethers ，aldehydes ，alkanes and others.The main aroma substances are citronellol ，geraniol ， phenylethyl alcohol ，linalool ，eugenol ，rose ether and so on. REO has stable quality and antioxidant ， anti–depressants ，anti–bacterial activity ，and it can be used to health care products ，cosmetics and high– end chemical daily necessities for a type of natural flavoring additives.Based on the latest researches which were home and abroad in recent 10 years ，the extraction process ，chemical constitution ， physic–chemical property ，biological active functions ，and application of REO were summarized. The information might lead to a reference value in depth study ，the comprehensive development and application of the REO.
